Greek Salad
Enjoy this light side in the heat of summer!  Perfect for summer, and it’s so simple!
Ingredients
· 3 Tomatoes*, large diced
· 1 Red Onion*, thinly sliced
· 1 Cucumber,* seeded and large diced
· 1 Red Bell Pepper*, diced
· 1 Green Bell Pepper*, diced
· 1 C Kalamata Black Olives
· Fresh Parsley, about 1/2 cup
· 1/4 lb Greek Feta Cheese
· 1/4 Cup Olive Oil
· 3 Tb Red Wine Vinegar
· 1 tsp Oregano
· Coarse Salt and Pepper
· French Baguette*, cubed


Directions
1) Combine vegetables, olives, and parsley in a large bowl. Rest sliced feta on the top of salad.
2)  Combine oil, vinegar, and oregano in a small plastic container with a lid. Shake vigorously to combine oil and vinegar and pour over salad and cheese.
3) Season with salt and pepper and let the salad marinate until ready to serve. Serve salad with torn, bite size pieces of French bread, baked with oil at 425F for ~10-12 minutes.

 Citrus Vinaigrette

 Ingredients

· 1/3 C Fresh Grapefruit Juice         1/3  cup Extra Virgin Olive Oil
· 1/3 C Fresh Orange Juice              2 Tb fresh Lemon juice
· 1tsp Dijon mustard                        2 tsp Ginger (freshly grated/dried)
· 1 Tb Honey                                   1/4 tsp Salt
· 1 Tb Soy Sauce (optional)             1 Bunch Arugula or Salad Mix

Preparation

Combine all ingredients in a small bowl; cover and chill.  Serve
with peppery arugula (or ANY market greens) and all the
fresh veggies you can find!

Spring Vegetable Rolls

Asian Dipping Sauce
· 1 Tb Soy sauce,
· 1 Tb Water,
· 1 tsp Rice wine vinegar
· 1 tsp Sesame seed oil,
· Honey and Hot sauce to taste
· Peanut Butter (optional)

Preparation

 One at a time, dip a sheet of rice paper into the warm water and lay flat on a plate.  Place a leaf lettuce onto the center and add some veggies of choice and a few torn up cilantro leaves.  Roll up like a small burrito and enjoy with the Asian Dipping Sauce!

TOMATO BASIL BRUSCHETTA

Take advantage of the fresh tomatoes, basil and bread the farmer’s market has to offer with this simple and delicious appetizer!

INGREDIENTS
3 Tomatoes, chopped
½ Red Onion, chopped
¼ C Fresh Basil, chopped
2 Garlic Cloves, peeled
½ lb Mozzarella, sliced ¼ “
2 T Balsamic/Red Wine
Vinegar (optional)
2-3 T Olive Oil
Loaf French Baguette, sliced
Pinch Salt and Pepper

DIRECTIONS
1. Preheat Broiler.
2. Combine tomatoes, onion and basil in a bowl
3. Stir in 1 Tablespoon vinegar and olive oil.
4. Season with Salt and Pepper
5. On baking sheet, toast bread for ~1 minute
6. Rub toasted bread with garlic and place
mozzarella slice on top of each slice.
7. Place bread back in oven and melt cheese
slightly, about 45 seconds.
8. Remove from oven and spread a
spoonful of tomato mixture on each
piece. ENJOY!
